Shashi here's the DHALPURI RECIPE:


**It takes a long time to do, but so worth it...!!
DOUGH:
8 oz all purpose flour
3 tsp baking powder
water (about 1/2 -3/4 cups)
2 oz margarine/ghee
**Additional ingredients
1/4 pt cooking oit
3/4 cup flour
Pastry brush


-mix flour and baking powder
-
rub in margarine/ghee
-add water slowly and mix in until a soft, but not sticky dough forms
-Knead for about 3-5 minutes until smooth...coat surface a a little oil , cover and leave at room temperature for 3-4 hours..
-Then cut into 8 pieces, round it off with hands and leave at room temperature for as long as needed to make the filling!

FILLING:
1 1/2 cups boiled split peas (not soft, aldente!)
1 -2 tbsp  toasted geera  (grind)
2-3 cloves garlic (Minced)
1/4 tsp saffron
small piece pepper(minced)
salt
tbsp vegetable oil


METHOD:
-boil split pea with saffron, salt until aldente (not soft)
-drain well ..let it dry out as much as possible
_Using a food processor, blend the split peas until fine..
-In a fry pan heat oil, and add garlic, pepper, geera and finely grounf split peas...cook on low for a few minutes...let cool
_Then roll out/or stretch out by hand the dough to about 2-3in diameter, coat in flour.
_Still holding in one hand fill with 1-2tbsp split pea mixture
-Fold the dough around the mixture and make a ball...make sure the end were brought together and well sealed..keep pinching until it's all secured..
_Roll in flour to cover all surface...make all eight balls .
_Then put a large fry pan on the stove at medium high (10 -12 in  diameter) or tawah if you have one
_Roll out Ball to about 8-10 inches circle..take it easy as you don't want to break the dough and have the filling come out!
_Using your pastry brush coat the hot pan with cooking oil
_Place the first roti into it..cook for about 1 minute
_Coat the side that up  (gently) with oil, then flip
press the edges with a spaula to make sure it's cooking too
_it should be swelling at this point
_Flip one more time
then place on foil that 's been covered with a kitchen towel...cover as you cook the others the same way!


ENJOY!...You can make larger batches and freeze them individually after the raw dough has been stuffed with the pea filling...but only do so after you've experimented a few times and feel comfortable  with the recipe!
